Walk into Bob's and you'll know immediately this isn't a chain — it's a living piece of Putnam County history. The same booths, the same counter stools, the same sizzle off the grill that locals have been waking up to for seven decades.

Owner Thomas Sprague has run the diner since his twenties, carrying on the legacy his family built. He knows his regulars by name, jokes with the commuters rushing for the Metro-North, and treats every stranger like a neighbor just arrived for breakfast.

"If you were having company over, how would you treat people? I just try to do the same thing. Consistency — make the food the same way every single time."

Everything is made with care: real butter, beef tallow on the griddle, Erica's sourdough bread, organic maple syrup, and organic jam. Fresh ingredients, every plate. No shortcuts.

Seven decades on Main Street

1955

The Doors Open

Bob Sprague opens the diner on October 15th at 27 Main Street in Brewster. A stamp costs three cents. Eisenhower is in the White House. The grill fires up for the first time.

1960s–70s

A Village Institution

Bob's becomes the heartbeat of Brewster's Main Street — a gathering spot for locals, commuters catching the train, and anyone who knows that a great breakfast is the best start to a day.

1980s

Second Generation

Jimmy Sprague carries on the family legacy, keeping the same recipes, the same warmth, and the same insistence on quality that Bob built his reputation on.

2006

Free Thanksgiving Begins

Thomas Sprague launches the diner's annual free Thanksgiving dinner — open to everyone. No matter your situation, you have a seat at Bob's table on Thanksgiving Day.

2025

New York State Senate Empire Award

Bob's Diner is honored with the New York State Senate Empire Award and a NYS Senate Commendation — recognition of seven decades of service to the Brewster community.

Bob's Diner is a historic building that has been part of Brewster since 1955. As with many buildings of its era, the diner does not have a wheelchair ramp or fully accessible restroom facilities. We want to be upfront about this so every guest can plan their visit accordingly.

We welcome everyone and will always do our best to make you feel at home. If you have questions about your visit or specific needs, please don't hesitate to call us ahead of time — we're happy to help however we can.

More than a meal

Bob's has never just been a place to eat. Since Thomas took over, the diner has been woven into the fabric of Brewster — sponsoring local events, welcoming everyone through the door, and making sure that nobody in the community goes hungry during the holidays.

Every year since 2006, Bob's hosts a free Thanksgiving dinner open to anyone and everyone. No reservation required. No cost. Just good food and good company. Patrons are welcome to bring dishes to share, but it's never a requirement.

Thomas puts it simply: as long as at least a couple of people show up, it's worth it. That's the spirit of Bob's Diner.
